Chicken Fried Steak

This recipe is from Pioneer Woman's cookbook: The Pioneer Woman Cooks, put in my own words because no one can replicate her
3 lbs cube stead
2 large eggs
1 1/2 cups milk, plus 2 cups for gravy
3 cups all-purpose flour, plus about 1/3 cup for the gravy
2 tsp seasoned salt
3/4 tsp paprika
1/4 tsp cayenne pepper
1 1/2 tsp black pepper
1/2 cup canola or veggie oil for frying

1) Mix eggs and 1 cup milk, put in plate or bowl and set aside
2) Mix seasoned salt, paprika, cayenne, black pepper and flour, put in a plate or bowl and set aside
3)Take a piece of meat (seasoned with salt and pepper) and dip it in the egg mixture to coat both sides.
4) Place meat in flour mixture and coat thoroughly
5) Repeat steps 3 and 4 once more
6) Heat oil in large skillet over medium-high heat. Fry 3 pieces of meat at a time, cook until edges start to look golden brown and then flip and cook on other side.
7) Remove from skillet, set aside and keep warm
8)After frying all the meat, heat grease on medium-low and add 1/4 cup grease back to the pan. Allow grease to heat up.
9) Sprinkle 1/3 cup flour evenly over the grease and whisk into grease until it makes a golden brown paste.
10)Whisking constantly, pour in 2 cups milk, whisk together and let gravy come to a boil. If it seems too think, add splashes of milk as needed. Season with salt and pepper.
11) Place warm meat on plate and pour gravy over.
12) EAT!!!

Greek Style Pitas

3/4 lb boneless lamb or beef
1 tbsp cooking oil (Matt used a little more)
2 cloves garlic, minced (I used 3)
1/2 tsp dried oregano, crushed
1/4 tsp dried thyme, crushed
2 oz feta cheese, crumbled
4 lettuce leaves
2 large pita bread rounds, halved crosswise
1 medium tomato, cut into thin slices
plain yogurt

1) Partially freeze meat. Thinly slice, across the grain, into bite size pieces (we did not have it frozen and it turned out fine).



 2)Preheat a wok or large skillet over high heat. Add cooking oil. Stir-fry the garlic, oregano, and thyme in hot oil for 30 seconds. Add lamb and stir-fry for 2 to 3 minutes or till done.

 3) Add feta to wok or skillet and toss together over heat. Spoon mixture into lettuce-lined pita halves. Add tomato slices and serve with yogurt.

Chocolate Chocolate Chip Cupcakes





Basalmic Kabobs





Cheesy Meatball Subs

1 lbs ground beef
1/3 cup Ritz crackers, finely crushed
3 cups traditional spaghetti sauce
12 cubes of cheddar cheese
4 hot dog buns
1/3 cup bacon bits
1 tbsp basil

Preheat oven to 400 degrees F. Combine crackers and ground beef in a large bowl. Form two tablespoons of meat mix into 12 balls and press a cube of cheese into each ball, making sure entire cube is covered.
Place onto a baking sheet and bake for 10 minutes, flip over and bake for an additional 4 minutes.
In a saucepan mix together spaghetti sauce, basil, and bacon bits. Bring to a boil and reduce to heat to keep sauce warm while toasting hot dog buns. Turn broiler on and open hot dog buns face up on a baking sheet and broil until crisp and dark around edges.
Put three meatballs on a hot dog bun and spoon spaghetti sauce over meatballs. ENJOY!!!
