Cheesy Meatball Subs
1 lbs ground beef
1/3 cup Ritz crackers, finely crushed
3 cups traditional spaghetti sauce
12 cubes of cheddar cheese
4 hot dog buns
1/3 cup bacon bits
1 tbsp basil
Preheat oven to 400 degrees F. Combine crackers and ground beef in a large bowl. Form two tablespoons of meat mix into 12 balls and press a cube of cheese into each ball, making sure entire cube is covered.
Place onto a baking sheet and bake for 10 minutes, flip over and bake for an additional 4 minutes.In a saucepan mix together spaghetti sauce, basil, and bacon bits. Bring to a boil and reduce to heat to keep sauce warm while toasting hot dog buns. Turn broiler on and open hot dog buns face up on a baking sheet and broil until crisp and dark around edges.
Put three meatballs on a hot dog bun and spoon spaghetti sauce over meatballs. ENJOY!!!

Turkey Pot Pie
Filling
1 ½ cups cubed cooked turkey or chicken
2 cups frozen peas and carrots (we used a mixed veggie bag)
1 medium onion, chopped (1/2 cup)
1 jar (12 oz) turkey gravy
Crust
2/3 cup Betty Crocker® Potato Buds® mashed potatoes (dry)
2/3 cup hot water
1 ½ cups Original Bisquick® mix
1/3 cup milk
1 tablespoon freeze-dried chives (we didn't use these)
Turn your oven on to 375 degrees F.
In a saucepan combine turkey, vegetables, onion and gravy to boiling on medium heat for 1 minute (I was a little confused because the gravy doesn't make for a lot of liquid in the pot but just do what it says). Stir constantly or it'll burn. Keep warm.
In a bowl, stir dry potatoes and hot water, let water absorb and then stir in remaining crust ingredients until dough forms. Place dough on surface sprinkled with Bisquick mix, gently roll the dough to coat it. Knead it 10 times. Pat into a rectangle the size of the pan you'll be using (ours was a 9x9, the recipe says 11x7 but we didn't have a pan that size).Pour turkey mix into pan or baking dish, carefully place dough rectangle on top of mixture. Bake 30-35 minutes or until crust is golden brown.
BBQ Pulled Pork Sandwiches
Our new secret weapon...or maybe not so secret.
2 1/2 lbs pork roast (we actually doubled the recipe)
14 oz BBQ sauce of your choice
1 tsp brown sugar
1 tbsp lemon juice
1 medium onion, chopped
Place the pork roast in the slow cooker with an inch or two of water in the bottom. Cover and cook on low for 10-12 hours or on high for 5-6 (we did on high for 6 hours).
Remove roast and place it on a plate, use two forks to pull apart the meat into shredded pieces.
Pour out the liquid in the slow cooker and return shredded meat. Combine remaining ingredients with meat.
Cook on high for 2 hours.
Now.....EAT!!!
